Gathering is done at dawn, before the heat of the day carries off the scent, and the buds are dried quickly at low temperature. They keep in this way their deep pink-purple tint, their sepals still green in a ruff, an olive shape firm under the fingers, and that frank, honeyed rose smell which lingers long at the bottom of the jar. In the mouth the infusion is floral, a little astringent, with no added sugar.
