The Chinese name, 龙眼, says “dragon’s eye”: once the shell is removed, the white, glossy pulp tight around the black stone does indeed draw an eye. The tree is grown in southern China and in Vietnam; the fruits are picked at full maturity, peeled, stoned, then dried at low temperature. The flesh then turns brown, supple, a little sticky, almost translucent against the light, and the sugar concentrates in it to the point of recalling raisin and flower honey.
