The grains are moistened and kept warm for a few days, long enough for a rootlet of two or three millimetres to emerge, then the whole is dried gently to halt germination. The product comes as pale yellowish-brown grains, hard and light, capped with fine whitish or greenish shoots that break at the slightest rubbing. The smell is mild, frankly cereal, between malt and toasted bread; the taste is faintly sweet.
